In
a sauce pan, warm the oil over medium heat. Add the
onion, bell pepper, celery, garlic and saute until everything
is softened, about 5 minutes. Mix in the remaining
ingredients, reduce heat to low and cook until mixture
thickens, approximately 30 minutes. (I cook it longer
than that ... just because). Stir frequently. Put
the sauce in a blender and puree until it is smooth.
Serve warm or chilled. (I like it over smoked turkey,
but just about anything works).
