Neighbors are hiding!
I have so much zucchini and have been giving them to neighbors - but, I think that they are hiding when they see me coming now! I am running out of recipes. Any ideas? Please help!

When I was a kid, my mom made the mistake of planting about 8 zucchini plants and was in the same boat, Mbday! We got very tired of eating them, despite Mom's best efforts to vary the dishes. The following year, we planted two, which was just enough. I don't have any recipes, but I'll bet Drac does.
I’m more confused than a chameleon in a bagful of Skittles.

You would be correct, LadyK! I shred and freeze to make yummy things in the winter! Here is an Australian recipe called Zucchini Slice. I think I already converted the amounts. I do dice the bacon and fry in a pan with the onion first. I also use the attachment on my food processor to shred the zucchini.
Zucchini Slice
375 gram or 4 cups shredded zucchini
1 large onion
3 rashers bacon
1 cup grated cheddar cheese
1 cup self-rising flour
1/2 cup oil
5 eggs
salt, pepper
Grate unpeeled zucchini coarsely; finely chop onion and bacon. Combine flour, oil and lightly beaten Eggs; season with salt and pepper. Mix with zucchini, onions and bacon. Pour into well-greased 13" X 9" casserole dish and bake in moderate oven (375-400 degrees F) 30 - 40 minutes until browned. Serves 4-6. The above recipe is from the Australian Women's Weekly "Best Recipes from the Weekly".

yum, that sounds good Drac. thanks. I fried up 3 zucchini last night and ate all 3 of them. I have gained 20 lbs since this virus. A few years ago, I planted like 5 zucchini plants and hubby finally caught on that I was shredding it into every dish I made. spaghetti, mashed potatoes, sloppy joes, etc. I was just trying to get rid of it!
