canned green beans from 2006

I just brought up five quarts of canned green beans that I did in 2006. Should I throw them away or do you think they would be still good to eat? I hate throwing them away as green beans are a pain to can with a pressure canner and the de-ending and stuff.

I looked up pressure cooked green beans, and it suggests 5 years. Bet Drac would know.

Ten years is a long time, Mbday. I wouldn't trust them.

Even if they were pressure canned, I wouldn't trust them. I've opened them up after 5 years and they were OK, but the texture was awful - I threw them away.

I personally have decided that green beans are a vastly over-rated vegetable, whether boiled, steamed or in a casserole. I think mbday must be of the same persuasion or those beans would never have been unopened for 10 years!

I dearly love fresh green beans! Hubby makes green beans, smoked ham hocks and new potatoes in a big pot and people just inhale it!

I totally adore green beans - most of ours here in the U.K. come from Kenya.

okay, I tossed them out. drac, I need to try that recipe with the ham hocks. That sounds so good. does he put in bouillon cubes or anything?

Here is what he does - I have no specific amounts! In a pressure cooker at 10# for roughly 30 - 40 minutes, cook some smoked hocks, onions, celery and garlic in chicken broth. After the pressure is down, strain everything. After the meat has cooled, remove from the bone and cut into bite sized pieces. Put the reserved broth in a large pot. Discard the rest. Dice up some fresh onions and celery; add to the reserved broth along with the green beans and some peeled and cut up potatoes. Cook until all the veggies are fork tender but not mushy. Add in the cut up meat, reheat and season to taste with salt and pepper. If you need to add more chicken broth to the large pot to cook the veggies, go ahead. You can make this as sort of a "soup" or with less broth as more of a side or even a main dish.
