Gabriel's Creole Barbecue Sauce

  1 tsp oil (canola or corn)  1/2 cup pecan pieces 
(I up this to 1 cup)
  1 medium onion, chopped 6 tbsp Creole mustard such as Zatarains
(I've also used hot/sweet mustard)
  1/2 green bell pepper, chopped  3 tbsp brown sugar
  2 stalks celery, chopped  1/2 tsp Tabasco
or other hot pepper sauce
  3 garlic cloves, minced 1/2 tsp fresh ground black pepper
  1 cup peeled and seeded crushed tomatoes (canned is ok) 1/2 tsp white pepper
  1 cup chicken stock 1/2 tsp cayenne
  2/3 cup cider vinegar Salt to taste
  Cooking Instructions:

In a sauce pan, warm the oil over medium heat.  Add the onion, bell pepper, celery, garlic and saute until everything is softened, about 5 minutes.  Mix in the remaining ingredients, reduce heat to low and cook until mixture thickens, approximately 30 minutes.  (I cook it longer than that ... just because).  Stir frequently.  Put the sauce in a blender and puree until it is smooth.  Serve warm or chilled.  (I like it over smoked turkey, but just about anything works).
